I oddly can't think of any other gender bender anime that I like. I can think of a bunch of gender bender manga, but no anime......well, there's Ouran
High School Host Club. That might fit your description.

Cheeky Angel is the only one I can think of off the top of my head. But I don't know if that's exactly the kind of thing you're looking for.

My Japanese friend recommends "Stop! Hibari-kun". Like Star I would
recommend "Cheeky Angel" (it has a rather unique art style), and
there's a very good manga series called "Gacha Gacha: The Next Revolution" that is also
similar. "Pretty Face" is also a good manga series that is currently coming out in English.

Manga: Futaba-kun Change! , Akane-chan Overdrive, and Pretty Face
(although I don't know about Cheeky angel....back when I watched it, I noticed that everything I liked about gender-benders was absent, and everything I loathed about gender-benders was the main focus.)
