RT's ending to Inuyasha left a lot unsaid, but provides enough clues that a reader can infer what's unsaid. But clues are open to multiple interpretations.

I took Inu-Kag being outdoors as just that, them going about their daily business. I interpreted these scenes as indications they have settled down to make a home of their own in the village, with no more roughing it outdoors. I didn't need to see their actual house, I presume there is one.

I think Kagome still has her powers but needed to learn to apply them to little things as well as the great big ones. And that's what she's been learning from Kaede. It was well established in anime and manga that Kagome is a healer by nature, as when she applied modern-era first aid to deal with injuries suffered by her friends. But she also needed to learn the Feudal Era's healing arts because that's what she will have to work with the rest of her life.

A lot of what Kagome learned in high school will benefit her Feudal village. Basic hygiene, like the once-heretical idea that healers need to wash their hands before and after tending to a sick person, will work wonders for the village's public health. A layman's understanding of germ theory and how to prevent infections is of enormous value. Knowledge of Feudal Japanese history may be helpful in preparing the village for upcoming wars and natural disasters. Kagome would know the value of literacy and would ensure village children learn to read, write and do basic arithmetic. So many of the basic concepts that we take for granted today were once revolutionary ideas that changed the face of the world as people knew it.

Kagome is most likely to succeed Kaede as the village's priestess and protector, and will become one of the village's most important residents. There's no way she'd be sidelined, unless she chose to be. But most of the time her duties will be mundane, unexciting routine.

In real life we have people who are the protectors of society like soldiers, police and firefighters. Most of their time is spent in study, training, housekeeping, and other dull-routine support functions that will keep them ready to put their lives on the line when there's war, crime or disaster. So it is with Kagome. She's picking herbs for use when sickness breaks out, she'll take up her bow to use against hostile youkai when she must. But most of the time she'll be studying, training, doing housekeeping, all in preparation for the times when she needs to protect her people from sickness, assaults and natural disasters. But with the jewel gone, there's nothing special about the village anymore that would attract menace, so there are fewer threats now.

As to the lack of PDA (public displays of affection), that doesn't mean the bond between Inu and Kagome isn't deep and solid. Yes, I would have liked them to kiss after Inu pulled Kagome out of the well. But it was obvious from the images that they were rejoicing at their reunion, and that is enough. I know this couple who've been married for 30 years, had kids and now grandchildren. You hardly ever see them doing anything more than holding hands, but they couldn't live without each other.

Recall the apocryphal Chinese curse: "May you live in interesting times." Kikyou lived an "interesting" life but all she ever wanted was to be an ordinary woman living out a mundane life. Kagome and Inuyasha went through their interesting times, and now deserve a chance for an ordinary, mundane, everyday life. The very ordinary life they seem to be living now is their ultimate reward.
