Shinobu is far too romantic to end up with someone who pretends to be a totally uncaring pervert. Lum, however, has the benefit of seeing through the facade.

Really good consideration, I wouldn't say Shinobu is "Superficial", she's good and sweet, but she tends to approach only good-looking guys.
Lum, instead, doesn't seem caring appearance too much, besides, she seems attracted by men with interesing personalities and good souls. This would explain why she dumped Rey, supreme beauty without character, in favor of a poor-looking guy like Ataru, who has, however, a real good nature, behind his affectations. There are many other guys with good hearts in the Urusei yatsura's cast, like Inaba, Tsubame and even Mendou in his own way, but none of them seem to be so afraid to shows it like Ataru. Maybe, this is the thing about him that affected Lum mostly. I agree with your theory that Ataru's early rejection of her advances may be part of the reason she loves him... up to that point in her life, nearly every lifeform she encountered did whatever she asked because they wanted her as a possible lover, or wanted her to be their friend. (Her most overwhelming power in my consideration is her pure charm / charisma which she unconsciously projects.) I'm not sure how much winning the tag game "forced" her to be with him (under the traditional theory of wish-granting while grabbing an Oni's horns.) Despite any possible temporary effects of the contest, it's always been my belief that long-term exposure to Ataru made Lum fall truly in love with him. Mendo a good-hearted person??? Nope, he was the rich, smooth letch of the series who could get away with anything he wanted to, due to his looks and influence... but his roaming days were ended when he saw Asuka, who embodied every romantic image he had ever imagined. Cute, sweet, innocent... and he had to fight thru her defensive reflexes in order for her to consider him as a "big brother / fiance". And contrary to popular belief, he will survive their wedding night undamaged... (As a matter of conjecture, Asuka might be the one to be pleasantly surprised at the wedding night experience she undergoes after Ryoko arranges for the lights to be turned off....) Ah, but I get ahead of myself... now for the next segment of the FUYS Wedding Ceremony:
